Monday’s Meal: Chocolate Oatmeal no bake cookies

Hi!  Cammi here with Monday’s recipe.  Today starts Teacher Appreciation week at our school (an most nationwide).  I like to do something each day for our teachers, and then on the last day of the week give them a big gift.  The teachers do so much for our children, and oftentimes are completely overlooked.  This is the week to really spoil them!

This week one of the daily goodies are going to be chocolate oatmeal no bake cookies.  These cookies are so easy to make and are so delicious.  They literally melt in your mouth!  They can be a little tricky to make.  You need to make sure they boil a full two minute or they won’t harden.

There are lots of different versions of this recipe, and I’ve tried most of them.  Here is my favorite. 

CHOCOLATE OATMEAL NO-BAKE COOKIES
2 cups sugar
1/2 cup cocoa
1 stick butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

 

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for two full minutes.Remove from heat. Stir in peanut butter, vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.
