Monday’s Meal: School lunch idea-BLT Wraps

Hey guys!  Cammi here to bring you the last of the school lunch ideas.  I’ll be moving on to fun and creepy Halloween recipes for the next few weeks, so stay tuned!

Bacon is one of my favorite foods.  I will eat bacon in almost any way.  (Though I haven’t tried it dipped in chocolate yet.  I do like to dip it in syrup, so I’m sure it’s good in chocolate too.) My kids also love bacon, and love BLT sandwiches.  I love making wraps for their lunches because they aren’t as messy as sandwiches, and there’s no crust to peel off.

BLT Wraps

Ingredients

  • 1 pound thick sliced bacon, cut into 1 inch pieces
  • 4 (12 inch) flour tortillas
  • 1 cup shredded Cheddar cheese
  • 1/2 head iceberg lettuce, shredded
  • 1 tomato, diced

Cooking Instructions

  1. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
  2. Place 1 tortilla on a microwave-safe plate. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Repeat with remaining ingredients. Cut each wrap in half before serving.

Monday’s Meal: BLT Pasta Salad

Hi everyone! Cammi here for Monday’s Meal.  A few months ago I needed to make a pasta salad for a party.  I googled “pasta salad” and eventually I came across a recipe that struck my eye.  A BLT pasta salad.  Now.  I’m not sure if I’ve posted this before, but bacon is my favorite food.  I can’t even describe how much I love bacon.  A pasta salad that included bacon?  Yes, please!  I tried it, and wow was it delicious.  It was devoured at the party, and I’ve had multiple requests to make it again.  Success!

BLT Pasta Salad

Ingredients
  • 12 ounce corkscrew shaped pasta
  • 1/2 cup milk
  • 12 ounces lean bacon
  • 3 medium ripe tomatoes, cut into chunks
  • 1 tablespoon chopped fresh thyme
  • 1 clove garlic, minced
  • Kosher salt and freshly ground pepper
  • 1/2 cup mayo (i used 1/4 cup mayo and 1/4 cup greek yogurt)
  • 1/4 cup sour cream
  • 4 tablespoons chopped chives
  • 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts
Directions
Cook the pasta in a large pot of salted boiling water as the label directs. Drain and toss with the milk in a large bowl; set aside.
Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Drain on paper towels. Discard all but 3 tablespoons drippings from the pan. Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper.  Crumble the bacon into bite-size pieces; set aside 1/4 cup for garnish. Toss the remaining bacon and the tomato mixture with the pasta.
Mix the mayonnaise, sour cream and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper. Add the lettuce; toss again to coat. Garnish with the reserved bacon and the remaining 1 tablespoon chives. Serve at room temperature.
